A Little Premature (and a Giveaway!)

I have few excuses (and even fewer good ones) for why I do many things... but the facts of the matter are undeniable, and as such, I've come to accept them... and well, you might as well too. How this little quirk of mine came to be is unknown, but it is without a doubt the reason for which I just now finished reading (every single page of) my October Cooking Light magazine. That it might also contribute to why I have only posted one single, solitary Christmas cookie recipe on this the 21st day of December is another matter all together... and sadly, this below is not number two.

But before you shed a tear (assuming you kept reading after hearing this post isn't about a delicious sweet treat), know that my quirk of obsessively reading each and every single page of every magazine I subscribe to finally worked to our advantage. Lurking on one of the very last pages of my Cooking Light was this unobtrusive little warm-your-tummy but won't add-to-your-waistline Black Bean and Salsa Chili.

And while at first I was in disbelief with the realization that it wasn't delicious, buttery cookies (or even chocolate!) on the brain, rather this pot of hearty turkey and black bean chili, after simmering the blend of fragrant herbed and spiced ground turkey and mixing it with black bean puree (studded some more of its own kind), all of my cares (and along with those, my sweet tooth) were long forgotten.

With the amount of crud that I continue to give myself for only just a few days ago posting my very first Christmas cookie recipe, you'd think I wouldn't be turning to the healthy stuff so irrationally... but with two (out of three) cookie exchanges under my belt, let's just say that my belt is no longer fitting quite the way it used to.

But wait... don't go! I want to know how you're planning on detoxing from the Season. And I'm willing to give one of you a free subscription to one of my favorite magazines, Cooking Light, in exchange for your healthy ideas and recipes suggestions. Here's how:

  • Enter once by leaving a comment on this post telling me what your favorite way go go healthy after the holidays (or anytime) and a way that I can contact you if you don't have a blog.
  • Enter a second time by Tweeting (hate that word) about this giveaway using @karaskitchen & leaving another comment on this post letting me know that you did so.
  • Enter another time by posting about this giveaway on your blog & leaving (yet) another comment on this post with those details.
Contest ends 10 pm EST on Sunday, December 27. Using random.org, I’ll select one winner on Monday morning.

Update!! Abby from Confabulation in the Kitchen (who tweeted about the giveaway) is the big winner! Thanks to all who participated!

  1. Favorite way to go healthy after the holidays? Starvation diet! Just kidding. Actually, I just go back to my low sodium, vegetables, fruit, and dietary fiber foods to "purge". And I drink plenty of fluids too! Can't wait to try that chili recipe!! HOT STUFF!

  2. The best way for me to get healthy after the holidays is to count my points. I get back to the old adage "you bite it, you write it" and it gets me back on track quickly!!!!

  3. It's called put down the cookies and put on the running shoes. Seriously, the cookie exchange was great but I had cookies for breakfast. BREAKFAST. Enough said.

  4. I'm with Jayne on this one...counting the points! Plus making those new year's resolutions to eat better, exercise more etc. :) Thanks for the chance to win!

  5. That is some yummy-looking chili! I just make sure to always take the time to exercise. Maybe it's less time over the holidays, but even if I only have 20 minutes, I make sure to get out for a run or squeeze in a spin class. That helps me stay sane and keeps the excess poundage at bay. (No need to enter me in the contest, though - I work for the same company that publishes Cooking Light. But thanks anyway!)

  6. I'd have to go with the gym. Even though I know that counting points is really the best way to get healthy, I mentally feel better when I'm working out!

  7. Definitely focusing more on working out (since I seem to have more free time after the holidays) and also steering away from comfort food! That's what the holidays are about, but afterwards I try to switch back to more vegetable and fish-based meals and whole grains. Stuff like garbanzo bean and spinach salads or mackerel (gotta get that vitamin D in the winter) and brown rice!

Beautiful photos for the chili. And is that a le creuset? Jealousy!

  8. Hmmm, favorite way to get healthy. hmmm, although we keep it pretty healthy year round, but we are keeping up with last year's tradition of training for the Pittsburgh Marathon. I've always been a workout fanatic, but Paul joined my fitness train last year. It's a great way to bounce back from the holidays (and a new baby)!

The turkey chili looks great! I was looking for a great chili recipe for a party we're having this weekend and I think that's going to be a winner!

    Merry Christmas!
